Foodie Friday: Blueberry Cobbler

I think our favorite foods usually have a happy memory associated with them. With July 4 approaching, I’m recalling some of my own favorite childhood foods that we always had this time of year: grilled hamburgers, homemade ice cream (using the old-fashioned mixer with a hand crank that we all took turns with until we felt like our arms would drop off–but no ice cream ever tasted better), and fruit cobbler.

This recipe comes from my paternal grandmother and was likely passed down to her by her mother. It works with pretty much any fresh (or even frozen) fruit: peaches, berries, apricots, cherries. My favorite take on this is with blueberries. It’s a no-fail recipe and SO easy! So I hope you’ll enjoy:

Grandma’s Blueberry Cobbler

Heat oven to 350˚ F

Melt one stick of butter in the bottom of a 9″ x 13″ pan.

Mix together and pour over the melted butter:

  • 1 & 1/2 c. sugar
  • 1 & 1/2 c. flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 c. milk

Mix together and bring to a boil, then simmer for 10 minutes:

  • 4 c. sliced fruit
  • 1 c. sugar
  • 1 c. water or juice from fruit

Pour fruit and all juice over batter. Don’t mix! It’s going to look impossible right now, but trust me, the batter will rise through the fruit and make an unbelievably yummy crust.

Bake for one hour.

Top with a dollop of vanilla ice cream and enjoy!
